Chicken with Broccoli and Garlic Sauce


1 lb Boneless skinless chicken breast- cut into 1 inch pieces
2 tsp EVOO ( Extra Virgin Olive Oil)
2 T of minced Garlic
1/4 tsp dried thyme
Salt and Pepper to taste
1 lb Broccoli Frozen (or fresh just do step 5 longer if needed)
2 Cups Chicken Stock
2 Green onion stalks, diced

1. Heat Oil over Medium-High. Add Garlic and Saute for about 1 Minute.
2. Sprinkle thyme, salt, and pepper over chicken, then add to pan.
3. Saute chicken till brown... stir it often, you don't want it to stick to pan.
4. Add Broccoli and saute for about a minute.
5. Pour in stalk and cover and cook for about 5-9 minutes... till broccoli is cooked warmed.
6. Stir in onions before serving.

Serve over rice.

If sauce is too brothy for you, mix corn starch and cold water and then add it to the pot.

Serves 4.

Weight watchers... One serving is 3pts. I like to bulk up the portion by adding more broccoli.
