LUCHOW'S GERMAN POTATO SALAD...SINFUL!
This one came from some guy at Heath's work and is enjoyed on "Dog Day" kind of like pizza day at Heath's work. They eat hot dogs, sauerkraut and these potatoes.
1 pound (3 medium) potatoes
6 slices bacon, diced
1 medium-size onion diced
1/2 c. vinegar ( I recommend apple cider NOT distilled...unless you want to clean your teeth with it!)
1/2 cup stock or bouillon
1 tsp. salt
1/4 tsp. pepper
1 tsp. sugar
1 egg yolk, beaten
Scrub potatoes; rinse. Boil in jackets; let cool. Peel and cut in 1/4 inch slices. Cook bacon in hot pan utnil crisp. Add onion; stir and cook until trasnparent. Add vegar, stock or bouillon, and seasonings. Stir; let come to a boil. Stir in egg; remove from heat and pour over potates. Serves 2-4.
After I posted this I realized that Bryndee only does one recipe at a time. So, sorry if this is confusing!

Chicken with Broccoli and Garlic Sauce
1 lb Boneless skinless chicken breast- cut into 1 inch pieces
2 tsp EVOO ( Extra Virgin Olive Oil)
2 T of minced Garlic
1/4 tsp dried thyme
Salt and Pepper to taste
1 lb Broccoli Frozen (or fresh just do step 5 longer if needed)
2 Cups Chicken Stock
2 Green onion stalks, diced
1. Heat Oil over Medium-High. Add Garlic and Saute for about 1 Minute.
2. Sprinkle thyme, salt, and pepper over chicken, then add to pan.
3. Saute chicken till brown... stir it often, you don't want it to stick to pan.
4. Add Broccoli and saute for about a minute.
5. Pour in stalk and cover and cook for about 5-9 minutes... till broccoli is cooked warmed.
6. Stir in onions before serving.
Serve over rice.
If sauce is too brothy for you, mix corn starch and cold water and then add it to the pot.
Serves 4.
Weight watchers... One serving is 3pts. I like to bulk up the portion by adding more broccoli.
Salita Chicken
3 Boneless Skinless Chicken Breasts
1 jar of Salsa (12 oz-16 oz)
1 can cream of mushroom condensed soup ( fat free... if you prefer)
1/2 package of taco seasoning
1 can black beans, drained
1. Combine chicken and salsa in crock pot. Cook about 4 hours.
2. Shred chicken. (while in the crock pot) Add remainder of ingredients and cook for another hour on low.
3. Eat. Serve over rice, in tortillas, or over chips.
Weight watchers... 1/2 cup is 3 pts (and that is with full fat condensed mushroom soup!)... and served over 1/2 Cup rice... makes this a 5 pt main dish! SwEEEEt!
Okay... I love this, and ate it tonight. It was a hit with the whole fam. We ate it over rice and it was DELISH! I was just gonna do the cannery salsa and chicken... but then I was talking to my awesome sister in law and she inspired this number... THANKS JENN!
Note... This is a great food storage meal! If you have bottled chicken... just add all the ingredients and warm. I think next time I will add 1 can great northern beans, drained too. There was a lot left over... Great for freezing half !
