Weight watchers... point value of cake mix serving. (12 servings in a box)

Chicken with Broccoli and Garlic Sauce

1 lb Boneless skinless chicken breast- cut into 1 inch pieces
2 tsp EVOO ( Extra Virgin Olive Oil)
2 T of minced Garlic
1/4 tsp dried thyme
Salt and Pepper to taste
1 lb Broccoli Frozen (or fresh just do step 5 longer if needed)
2 Cups Chicken Stock
2 Green onion stalks, diced

1. Heat Oil over Medium-High. Add Garlic and Saute for about 1 Minute.
2. Sprinkle thyme, salt, and pepper over chicken, then add to pan.
3. Saute chicken till brown... stir it often, you don't want it to stick to pan.
4. Add Broccoli and saute for about a minute.
5. Pour in stalk and cover and cook for about 5-9 minutes... till broccoli is cooked warmed.
6. Stir in onions before serving.

Serve over rice.

If sauce is too brothy for you, mix corn starch and cold water and then add it to the pot.

Serves 4.

Weight watchers... One serving is 3pts. I like to bulk up the portion by adding more broccoli.

Salita Chicken

3 Boneless Skinless Chicken Breasts
1 jar of Salsa (12 oz-16 oz)
1 can cream of mushroom condensed soup ( fat free... if you prefer)
1/2 package of taco seasoning
1 can black beans, drained

1. Combine chicken and salsa in crock pot. Cook about 4 hours.
2. Shred chicken. (while in the crock pot) Add remainder of ingredients and cook for another hour on low.
3. Eat. Serve over rice, in tortillas, or over chips.

Weight watchers... 1/2 cup is 3 pts (and that is with full fat condensed mushroom soup!)... and served over 1/2 Cup rice... makes this a 5 pt main dish! SwEEEEt!

Okay... I love this, and ate it tonight. It was a hit with the whole fam. We ate it over rice and it was DELISH! I was just gonna do the cannery salsa and chicken... but then I was talking to my awesome sister in law and she inspired this number... THANKS JENN!

Note... This is a great food storage meal! If you have bottled chicken... just add all the ingredients and warm. I think next time I will add 1 can great northern beans, drained too. There was a lot left over... Great for freezing half !

LOVE in a Mug.

I hope my friend/ cousin doesn't mind I hijacked this from her. This treat has joined me many a nights after a long day.. the kids are a sleep... and I want a yummy piece of Chocolate cake. Great for 2.... or just one... :)

1/4 cup flour
1/4 cup sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
3 Tbsp. chocolate chips
1 small splash of vanilla extract

1. Measure the flour, sugar, and cocoa into a coffee mug, mix well with a fork.
2. Add the egg and mix thoroughly.
3. Pour in the remaining ingredients and mix well.
4. Put your mug in the microwave and cook for 3-3 1/2 minutes at highest power . The cake rises, but doesn't spill over.

Run a butter knife around the edge and tip onto a plate (or eat it straight out of the mug!).

We add a hefty scoop of Ice cream to the top... MMM...

Thanks Katy! You're the Best~!

Note: Easy gift Idea... a classy mug... dry ingredients from this recipe measured out in a bag... rest of the recipe and directions on a cute card... It will be a hit with the VT sisters! ( my sister Nikki did this... )

1 1/2 t Baking Soda
1/2 t Salt

1. Blend all together.
2. Spray and Flour cookie sheet
3. Bake 20-25 min @ 350deg.
4. Pour glaze immediately after removed from oven. (optional.)
5. Sprinkle chopped nuts. (optional.)

Basic Glaze:

1 C Powder Sugar
1/8 C Melted butter
1-2 T Water
1 t Vanilla

I hope your family can enjoy those brown bananas with this recipe.

Tip: When your bananas are brown and soft....

-Remove from the peel and place in a freezer safe Ziploc. That way they are great in shakes. Or defrost for mashed banana Baby food.

-Place the whole brown bunch in freezer, peel and all. Defrost in fridge or counter. Cut top and squeeze into the bowl once defrosted. I find the recipe turns out better with defrosted bananas.
